Product description
MetaGum® is high a specially formulated, homogeneous mixture of esterified metatartaric acid and gum arabic. The two
components - the high degree of esterification and stable metatartaric acid and the easily soluble gum arabic - increase the time of
crystal stability. Product authorized under Commission Regulation (EU) 934/2019 EC. During its use, the national regulations must be taken into account. The product has been tested in a specialist laboratory for purity and quality.
The goal is to permanently prevent tartar (potassium hydrogen tartrate) in wine, and to increase crystal stability
also at higher temperatures.

MetaGum® prevents the formation of crystals even in new wines oversaturated with tartar. If simple metatartaric acid is used
there is a danger that the compound will no longer break down into tartaric acid with a crystal stabilizing effect. This depends on the wine's storage time and
storage temperature. The specially designed, homogeneous mixture of the components that make up MetaGum® slows down the hydrolysis of
metatartaric acid. The stabilization time is extended thanks to MetaGum®. The exact
determination of the stabilization time is only possible to a limited extent due to different wine compositions and storage conditions. A closer reference is given by the determination of the
wine saturation temperature.

Dosing and application
Dosing amount: 10 g / 100 l, maximum 13 g/100 l.
MetaGum® is mixed in 10-20 times the amount of wine. After a few minutes, it dissolves completely when mixed again. After complete
dissolution, add to the wine. The uniform distribution in the wine must be ensured by stirring.
MetaGum® is added to the wine at least 2-3 days before loading the wine. Immediately before filling, the wine must be thoroughly mixed once more in order to evenly distribute the MetaGum® and the
possibly added must concentrate.
The wine to be treated must have protein stability, so it must be clarified with a sufficient amount of bentonite, NaCalit® PORE-TEC.
In highly unstable wines, a mild and transient after the addition of MetaGum® and other metatartaric acid products may occur
confusion. To eliminate this uncertainty, care must be taken to administer MetaGum® at the correct time (so
at least 2-3 days before filling).

Storage
Metavin® Opti is hygroscopic, so it must be protected from odor and moisture effects. Opened packages are carefully resealed and
used as soon as possible.
