Details

Product features:

Seguin Moreau is one of the world's leading brands in the development, research and production of barrique barrels and related products. It is characteristic of their products and of the brand in general that they do not compromise either in design or production at the expense of quality! Premium quality in every respect is guaranteed by their history dating back to the middle of the 19th century and their continuous research.

Different types of Dongas can be combined (e.g.: 2/3 M , 1/3 M+) in order to achieve more complex aromas and flavors.

"M" roasting:

gives vanilla aromas and red fruit character, more roundness, a silky finish at the end of the sip.

"M+" roasting:

Gives more concentrated aromas, emphasizing dark fruity and spicy notes. The higher the quality of the wine, the more we strive for longer aging, because the goal is to achieve better assimilation and barrel character.

The 7 mm donga is for short aging, 4-6 months contact time.
For the 18 mm longer maturation, 10-12 months contact time.

Use:

Malic acid for maturing red wines before or after dissection.

About Roasts:

"M" - Medium toast:

Classic Bordeaux roast.
Moderate structuring effect, well-balanced complexity, vanilla, chocolate and brioche aromas.
Excellent for achieving tannins with a silky finish.

"M+" - Medium Plus:

Mainly dark fruits, a sweeter mouthfeel, with more concentrated and roasted aromas.
It hides the green character, but it is a little drier in the finish (compared to M)

Different types of Donga can be combined (e.g.: 2/3 M , 1/3 M+) in order to achieve more complex aromas and flavors.

Usage:

We recommend immersion installation, where the dongas are connected.

(you can also dip them directly into the wine, in this case they will float for a while, while they gradually sink to the bottom of the container)

In order to keep the wine-wood contact even when the wine is cold (below 14°C), a food-safe stainless steel (316L) cable must be used for the dongas to pull it out.

Initially, the SO2 level of the wine must be checked every 2 weeks!

The frequency of inspection must be increased during maturation to prevent the growth of bacteria, which can alter the development of the wine.

Homogenization:

During the aging process, it is important to regularly equalize the treated batch, either by turning it by pumping or by using the mixing device in the tank.
The dongas can be used several times, but we recommend only one use. Research has shown that at least 80% of the components in oak are dissolved within 6 months of contact time.

Interest:

Oak wood has a porous structure, 65% of which is air. Research shows that the reducing-oxidizing potential of oak soaked in wine changes, as part of the oxygen in the wood dissolves in the wine. Seguin Moreau's research and development department also took this fact into account when designing the collection, including the "O2 index" for each product.
