PROPERTIES OF UVAFERM SLO:
· Fast fermentation start, strong yeast dominance, smooth fermentation process
· Cold-tolerant yeast, ferments from 8 °C
· Optimal fermentation temperature range 15-34 °C
· Low foam formation, no Böckser formation
· Alcohol tolerant up to 16 tf%, good stress tolerance
· Extremely low volatile acid formation
· Medium formation of SO2 binding substances

After alcoholic fermentation, UVAFERM SLO yeast is characterized by a lower degree of autolysis than the standard yeasts known so far. This characteristic of UVAFERM SLO forms the basis for judging the wines fermented with the SLO strain: the pure tone, fruit character, harmonious aroma and taste. UVAFERM SLO ferments Chardonnay wines with pear, melon and citrus character. The experience of the winemakers in the carefully managed fermentation of the so-called "harmonic style" floral and fruity white wines at a lower temperature (15-18 °C) is as follows: with a higher yeast dosage (25-30 g/hl) and a higher dosage of Uvavital (3-4 x 10 g/hl), even more valuable wines in terms of fruit aroma, floral aroma and sense of fullness and roundness (other fruity aromas in the aroma character e.g. peach, passion fruit also appear).

RECOMMENDED DOSAGE: 20 g/hl under normal conditions, 30 g/hl under difficult conditions.
