Benefits of Uvaferm Restart 43 YSEO

The Uvaferm Restart 43 YSEO yeast is one of the most outstanding products in Lallemand's portfolio, which was specially developed to restart fermentations that have stalled with a bad G/F ratio. This yeast is particularly fructophilic, i.e. it utilizes fructose better than most wine yeasts, thus providing an effective solution to fermentation problems.

Outstanding features

• Saccharomyces cerevisiae var. bayanus: This tribe is famous for its reliability and efficiency.
• Killer active: Yeast can destroy unwanted microorganisms, ensuring clean fermentation.
• High alcohol tolerance: Works well up to 16% alcohol content, making it an ideal choice for wines with high alcohol content.
• Low formation of SO2 and H2S: Minimizes the formation of undesirable sulfur compounds, thus avoiding Böckser and volatile formation.

Special manufacturing process

Uvaferm 43 RESTART® is made with a special pre-acclimatization step, as a result of which the yeast is much more resistant to inhibiting factors than other wine yeasts. The manufacturing formula contains special micronutrients that increase the amount of survival factors. These factors, such as special sterols and polyunsaturated fatty acids, strengthen the yeast cell membrane.
