Details

Optithiols® – Innovative solution in winemaking

OptiThiols® is a special inactivated yeast preparation, which is formed by the natural reducing compounds of Saccharomyces cerevisiae yeasts. This product plays a key role in slowing down oxidative phenomena and promoting the formation of aromatic thiols, which is essential for the production of aromatic wines.

Main features and benefits

Rich in reducing compounds: OptiThiols® enriches must with precursors such as GSH, which are used by yeast during alcoholic fermentation. As a result, the synthesis and accumulation of GSH increases, which is released during the sweeping maturation, protecting the resulting thiol aromas.
Increasing the aromatic potential: Due to the dual role of antioxidant and aroma-revealing properties, it significantly increases the thiol content of wines (4MSP, 3SH, A3SH), which results in a measurable amount at the end of alcoholic fermentation.

Application

The use of OptiThiols® is especially recommended for those who seek to enhance the aroma and stability of wine. Ideal as a vintage material in the wine industry, where the goal is to preserve the natural aromas and improve the quality of the wine.

Summary

OptiThiols® is an indispensable tool of modern winemaking, which helps to highlight and preserve the aromatic notes of wines. Its use can ensure the oxidative stability of the wine and the outstanding aromatic experience.
