Product Information
The Gum Arabic (E414) is the natural sap of African acacia trees, which consists of polysaccharide (arabinogalactan-II) and a protein
fraction. This structure gives gum arabic two important properties:

• A highly hydrophilic character, which ensures great stability in aqueous or alcoholic solutions.
• Surfactant effect against emulsions and hydrophobic colloidal materials.
The stabilizing effect of gum arabic is based on the complex formed by polysaccharides and proteins, which has a stabilizing effect on
unstable colloids. This stabilizing effect varies according to the type of gum arabic.
Stabiverek is extracted exclusively from the plant sap of verek acacia (A. senegal), which is known for its high protein content and
excellent protective effect. The product is stabilized with SO2 and citric acid.

Stabivere in wines prevents the joining of unstable colloids in the following ways:
• reduction of color precipitation in red wines
• reinforcement of the stone-stabilizing effect of metatartaric acids
• prevention of metallic precipitation (copper/iron)
According to Commission Regulation 934/2019/EU allowed. National regulations must be checked by the user. Tested for purity and
quality.

Dosing
Stabiverek should be added to wine that has been filtered to the point of reflection. Dosing before diatomaceous earth filtration is not recommended, as it may lead to the exhaustion of the
filter. In the case of colloid-rich wines, problems may arise during the final filtration with a membrane.
Recommended dosage: 50-100 ml/ 100 l

Storage
Store in a cool and odor-free place.
