Product Information
The Oenoferm® MProtect Metschnikowia pulcherrima wild yeast can be used to suppress undesirable aromas created by spontaneous microflora on grape berries. Above all, we can prevent the formation of unwanted aroma components, such as volatile acid or solvent odors, which are formed during the formation of acetic acid and ethyl acetate. By using Oenoferm®
MProtect, the goal is not alcoholic fermentation, but control over microbiological activity and the resulting
SO2 savings. Applying wild yeast as soon as possible increases its effectiveness.

Dosage
Use 5 - 15 g of Oenoferm® MProtect yeast for 100 l of must or mash to achieve the optimal amount of living cells.
This ensures dominance over the spontaneous microflora on the grapes. Mix the yeast in a maximum of 30 °C, 10 times the amount
of water (or a water-must mixture) in order to achieve adequate activity and homogenization. Yeast can also be used without
rehydration.
The second inoculation with yeast guarantees complete fermentation and must be done 24 hours after inoculation with Oenoferm® MProtect
. Depending on the supply of nutrients, we recommend the use of Vitamon® and VitaFerm® yeast nutrients. During
rehydration, it is recommended to use the VitaDrive® F3 yeast activator in the same amount as the yeast, in order to ensure the
vitality of the yeasts at an early stage. We recommend X-treme.

Storage
Keeps for: 24 months. Vacuum packed product. Store in a cool place. Reseal the opened packages immediately and
use them as soon as possible, within 2-3 days.
