Product information

KaliContact is a specially prepared tartar inoculation crystal to promote tartar removal during the cold treatment of wines. The product
potassium hydrogen tartrate (E 336). To achieve tartar stability in a natural way.
KaliContact is a high-purity tartar seed crystal prepared for crystal precipitation, which with its particularly large reactive surface
enables tartar dissolved in wine to crystallize quickly. This crystallization is created by the combination of excess dissolved tartar
in the wine and the added seed crystals. The lower the temperature of the wine, the longer the
stone stabilization will be. Its use in food is limited. When using, you must pay attention to the general treatment
recommendations.

Authorized according to Commission Regulation 934/2019/EU. National regulations must be checked by the user. Tested for purity and
quality.
Dosage and application
4 g KaliContact/l of wine.

Before performing the cold treatment, the wine to be treated must be completely filtered. Safe and effective tartar stabilization can only be
secured in this way. In the case of acidification, KaliContact can be added directly to the acidified wine, without removing the acidification
sediment beforehand.

Due to complete safety against the precipitation of potassium hydrogen tartrate, not the individual blending sub-quantities, but the batch prepared for bottling (including the addition of must concentrate) must be subjected to cold treatment. During the treatment, the wine must first
be cooled to the desired stability temperature (+4Co -4Co), then 4 g of KaliContact per liter should be added and well
mixed. The treatment time is approx. 4-6 hours. It is recommended to stir the treated amount of wine every hour so that permanent contact is established between KaliContact and the
tartar dissolved in the wine. The crystal should be separated from the cooled wine with a broom or diatomaceous earth filter. According to experience, the wine stone
extracted in this way can be used several times if it is cleanly and carefully separated and stored. Due to the microbiological
danger, caution is recommended. Repeated application of the seed crystal may cause infection of the wines, lead to post-fermentation,
acid reduction or volatile acid formation.
